We've got cockroaches in the kitchen, what are cockroaches and where did they come from?
Cockroaches are beetle like insects of which with around 4000 different species, however there are only three of which are known to be associated with man: these are the American cockroach, the German cockroach and the Oriental cockroach. These cockroaches differ in colour and size with the American cockroach growing up to 40mm in length with a reddish brown colour. The German cockroach is very similar growing to around 15mm with a yellow brown body with brown ridges and finally the Oriental cockroach is dark brown to almost black in colour and these grow to around 17mm to 30mm in size.
We don't see cockroaches during the day but they appear at night, where do they go?
Cockroaches are generally nocturnal by nature and they like to hide away in dark areas such as beneath the kitchen units, once somewhere safe they release a congregation pheromone and this attracts other cockroaches to that place. A cockroach congregation gives off an unpleasant almond like smell and because large numbers build up this can become very noticeable. They are equipped with strong jaws that bite down with a force which is approximately five times greater than a humans bite.

How do we combat a cockroach infestation in our restaurant?
Generally speaking a high standard of hygiene is essential to combat any cockroach infestation, by keeping the kitchen and food storage areas clean and waste free, you will be denying food to the cockroaches meaning they are more active in the main and they will consume more insecticide. Cockroaches are on the increase in Maidenhead, Ascot and Windsor not only in commercial kitchens but also in domestic premises as well.
A cockroach infestation puts your business at risk due to the potential of diseases such as dysentery, gastroenteritis, typhoid and poliomyelitis and if found to have cockroaches on the premises your business will be shut down.
Cockroaches are a source of allergens which can lead to illnesses such as dermatitis, rhinitis, bronchitis and asthma.
Long lasting insecticide must be placed around the cockroach harbourage and maintained over the developmental period of that particular species.
Inward migration from outside infestations may demand that you receive routine treatments at your establishment to form part of your hygiene due diligence.
The presence of cockroaches can destroy your business reputation, driving away customers and leading to loss of trade and ultimately even closure of a food business.
